Food and Friends

On Saturday evening, I made plans to hang out with some friends. I used to do this all the time. I used to call up some friends, cook and chat. Something happened and before I knew it…months had passed since the very last time.

I love cooking. I love cooking with people around. I really love cooking with people around and eating with them. There just seems to be something that happens when you sit down to a meal with friends. Stories get told and laughs get had. Hearts open up and conversations get had that cause friendships to grow.

Jesus ate a lot. He even cooked. If we take a look at interactions he had over food, we see that there was always something that shifted. Hearts opened. Opinions challenged. Love was shared. Hope was kindled. Lives were changed. I want that. I want to be like Jesus.

Here’s the frittata recipe.

Veggie and Sausage Frittata

8 large eggs
1/4 cup heavy whipping cream
1/2 lb of breakfast sausage, cooked and drained
1/2 c. chopped broccoli florets
1/2 small, chopped onion
1/2 small chopped red pepper
1/2 small chopped yellow pepper
8 button mushrooms, chopped
3 cloves of garlic, minced
1 cup shredded cheese (divided)
olive oil
salt and pepper to taste
1/2  teaspoon of rosemary (ground)
Louisiana hot sauce, garnish

1. Heat up a small amount of olive oil (2-4 Tablespoons) in a cast iron skillet over medium heat. Add veggies and saute until cooked through, 10 min or so.
2.  Remove skillet from heat.
3. In a bowl, crack the eggs and beat in the heavy cream until pale in color and fully incorporated. Add salt and pepper to taste (probably 2 teaspoons of salt and 1 teaspoon of pepper).  Also add rosemary and 1/2 cup of cheese.
4. Preheat oven to 475 degrees.
5. Place skillet back over medium heat and combine sausage and vegetable mixture with eggs. Let cook til sides and bottom are set, but not burnt, about 5-7 min.
6. Sprinkle with remaining 1/2 cup of cheese and place in oven for 10 min or until completely set and cheese has crusted nicely.
7. Remove from oven and let cool for 10 min.
